Our Philosophy
At Les Hayes, we believe that style and substance are one and the same. Le Cyprès Chauve takes its name from the eponymous majestic tree, shaped like a lyre, that overlooks the property of the Château des Hayes.
Like our restaurant menu—renewed every 15 days—the Cyprès Chauve changes alongside the seasons: lush green in the warmer months, adorned with leaves and fruit, fiery red-brown in autumn, and bare in winter. As the only conifer to shed its foliage, it reveals its uniquely instrumental shape.
We are passionate about crafting a lively neo-rural cuisine, beating to the rhythm of nature and deeply rooted in seasonality. From the simple pleasure of a terrine to bolder, more daring combinations.
