The chef’s terrine is shared with a salad, pickled vegetables from the kitchen garden, a chutney and Orléans mustard. The simple pleasure that just about everything this house does begins with.
The prime mature rib — 1.1 kg — is seared over the fire and served with baby potatoes, regional vegetables, a salad and a chimichurri sauce made in house. Allow around forty minutes of cooking: this is the one to mention when you book.
The grilled octopus is worked until completely tender, then served with rice and seasonal vegetables, a spicy sauce and caramelised peanuts. The most unexpected dish on the menu, and the one guests come back to us about most.
The grand gourmet éclair is an outsized éclair to share for dessert, reinvented with the season. Order it at the start of the meal.

Le Cyprès Chauve serves a short menu, renewed every three weeks to follow the seasons and whatever the estate’s kitchen garden gives us. Country bistronomy signed by chef Cyprien Chapelle: the simple pleasure of a terrine, cooking timed to the second, and a few bold turns where they serve the produce.
